Although North Americans rarely do it, humans can and in most countries do eat animal innards. Ox tripe for instance is eaten in lots of countries from Europe to China.
Since tripe is mostly protein, if you prefer some fat in your meal you have to cook it with bacon and lard.
The dish in the picture was made by cooking the tripe (on top) about the same way as I cooked the rabbit which was described in an earlier article.
