Although North Americans rarely do it, humans can and in most countries do eat animal innards. Ox tripe for instance is eaten in lots of countries from Europe to China.<\/p>\n

Since tripe is mostly protein, if you prefer some fat in your meal you have to cook it with bacon and lard.<\/p>\n
The dish in the picture was made by cooking the tripe (on top) about the same way as I cooked the rabbit<\/a> which was described in an earlier article.<\/p>\n
