If it is roasted in pre cut pieces &#8212; as opposed to roasting a whole duck &#8212; it ends up with more crispy surfaces which enhances flavour considerably.<\/p>\n<p>Just remember that <a href=\"\/articles\/fat-is-your-friend\/\" title=\"Fat is Your Friend\">fat is your friend<\/a>, and you do want to eat it.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Duck meat cooked in the oven.
